Peter Sidwell Recipes: Spicy King Prawn Stir Fry

A quick, easy and delicious all in one pan meal, great for a mid-week meal or simple lunch. Try our Spicy King Prawn Stir Fry recipe by following our method below.

Serves 4

Ingredients:
• 400g dried egg noodles
• 3 tbsp sesame oil
• 1 clove of garlic
• 1 red chilli
• 20g stem ginger (peeled)
• 400g peeled king prawns
• 20 ml dark soy sauce
• 1 tsp fish sauce
• 15ml runny honey
• 1 lime
• 1 handful of chopped coriander

Method:

1. Boil a kettle full of water and cover the noodles, leave for 5 minutes to soften.

2.Heat the oil in a deep sided saucepan or wok. Chop the garlic, chilli and ginger finely and
add to the pan, cook for one minute then add the prawns and cook for a further two
minutes.

3.Next add in the soy sauce, fish sauce and honey, continue to cook for another minute.

4.Remove the noodles from the water and add into the pan, coat completely with the sauce
and prawns, squeeze in the lime juice and finish with the chopped coriander.

Serve immediately to ensure the meal is nice and hot
