A delicious, yet simple winter warmer!

Serves 6


  • 1kg Shin of Beef
  • 2 tbsp Olive Oil
  • 2 White onions, roughly chopped
  • 2 sticks celery, roughly chopped
  • 2 carrots, peeled and roughly chopped
  • 4 cloves garlic, roughly chopped
  • 2 tsp cumin
  • Dried chilli flakes (to taste)
  • 150g diced british chorizo
  • 400g tin of chopped tomatoes
  • 500ml dark ale
  • 2 beef stock cubes
  • Few squares of dark chocolate

To Serve

  • Fresh corinader
  • tub sour cream

Here’s how to make it:

  • Turn your slow cooker to high
  • Place onions, celery and carrots into slow cooker
  • Add chorizo and garlic
  • Lay thin slices of shin beef on top of the vegetables and chorizo
  • Add in the dried chilli flakes and cumin. Add in the stock cubes, tinned tomatoes and dark ale
  • Leave to cook, on high, for 8 hours
  • When the beef is cooked, stir through the dark chocolate and serve with fresh corinader and sour cream
